Regional Ambassadors - Puglia
The Apulian town of Bisceglie as recounted by its traditional desserts

On Saturday and Sunday, February 1st and 2nd, Puglia becomes the protagonist at FICO with a great Regional Ambassador: the Sospiro of Bisceglie.

With a name that's somewhere between mysterious and mischievous, the Sospiro (Sigh) of Bisceglie is a very light sponge cake made with eggs from free-range hens and Apulian flours flavored with lemon peel from the Bisceglie countryside. Its interior is filled with a cream made from the infusion of vanilla pods in milk, all covered with a thin sugar glaze.

Designated as a Slow Food Presidium in 2014, Italy's famous Sospiro is also part of the Ark of Taste, the network of biodiversity excellence to be preserved.

Don't miss the most breathtaking weekend of the year. Nine pastry chefs will be here to introduce you to the Sospiro, the history of Bisceglie and traditional Apulian sweets with cooking shows, tastings, and stories about the region.

SATURDAY, FEBRUARY 1ST

  • ore 11.00 Getting to know the region
    Welcome
    Presentation of the region with the video IL DOLMEN DELLA CHIANCA and an exhibition of historical photographs by the municipal administration and the Bisceglie/UNPLI tourist office.
  • 12:00 noon and 3:00 pm Presentation of the Sospiro of Bisceglie Project with a demonstration by the Associazione Pasticcierie Storiche Bisceglisi on how the sospiro was created
  • 4:30 pm Free traditional Apulian pastry workshops in the Arena
    Enjoy sweets from Puglia like the Sospiro, colva, and almond pastries

SUNDAY, FEBRUARY 2ND

  • 12:00 noon Getting to know the region

    Local producers present themselves
