Caseificio Valsamoggia brings at FICO the unchanged taste of cheeses from the Emilian Apennines. Since 1974, the typical cheeses of the area have been produced according to traditional and craftmanship procedures, such as aging on wood, handmade shaping, and the pivotal steps of curdling which are entrusted to the experience of skilled cheesemakers. From Squacquerone to the Colli Bolognesi Sweet Pecorino, mascarpone and ricotta, and specialties such as truffle-scented Appennino and Raviggiolo Fresco. Only the most authentic ingredients make up something special.
